Ingredients
  1. 100 g raisins
  2. 4 tsb dark Rum (optional)
  3. 1.5 kg of apples
  4. 1/2 teaspoon ground cinnamon
  5. 450 g sugar
  6. 1/4 tsp vanilla essence
  7. 1 pinch of salt
  8. 350 ml Collar of Gold, Irish Rapeseed Oil
  9. 700 g flour
  10. 1/2 tsp of baking soda
Instructions
  1. Put the raisins in a bowl and drizzle with rum.
  2. Peel the apples, halve them, remove the core and cut apples into pieces, dust with cinnamon and mix with raisins.
  3. Put the sugar, salt, Collar of Gold, Irish Rapeseed Oil,
  4. vanilla essence and baking powder unto a bowl and process until it resembles breadcrumbs.
  5. Spread two thirds of the sprinkled dough into a non-stick baking sheet.
  6. Press down and to the edges.
  7. Spread over the apples and the raisins mixture and sprinkle the remaining dough over the top.
  8. 3. Bake at 190 ° C for about 45 minutes until golden.
