Colourful vitamin salad
- 1 chicory or endive
- various selected leaves: radicchio, dandelion etc
- a few radishes
- 100 g of mushrooms
- 2 hard boiled eggs
- 2 onions
- 1 clove of garlic
- 4 tablespoons of wine vinegar
- 8 tbsp Collar of Gold, Irish Rapeseed Oil
- Wash the chicory and salad leaves dry and pluck into bite size pieces.
- Thinly slice the radishes and mushrooms.
- Peel the eggs and cut into quarters.
- Peel one onion and slice into rings.
- put out with the salad leaves onto four plates.
- Peel the second onion and the clove of garlic and chop very finely.
- Make a dressing of salt, pepper, onion, garlic, vinegar and Collar of Gold, Irish Rapeseed Oil
- Sprinkle over the salad as desired.
